Andrew J. Taylor, Deborah D. Roberts, "Flavor Perception"
English | ISBN: 1405116277 | 2004 | 304 pages | PDF | 2,1 MB

Unlike other human senses, the exact mechanisms that lead to our perception of flavor have not yet been elucidated. It is recognised that the process involves a wide range of stimuli, which are thought likely to interact in a complex way, but, since the chemical compounds and physical structures that activate the flavor sensors change as the food is eaten, measurements of the changes in stimuli with time are essential to an understanding of the relationship between stimuli and perception.

Charles T. Bourland, Gregory L. Vogt, "The Astronaut's Cookbook: Tales, Recipes, and More"
English | 2009 | ISBN: 1441906231 | 219 pages | PDF | 4 MB

Astronauts, cosmonauts, and a very limited number of people have experienced eating space food due to the unique processing and packaging required for space travel. This book allows anyone with a normal kitchen to prepare space food. Since some of the processing such as freeze dehydration, and packaging cannot be accomplished in the normal kitchen, many of the recipes will not produce the food that would be launched in space, but will prepare food similar to what the astronauts would eat after they had added the water to the food in space.

Breaded Fried Foods By Parameswarakuma Mallikarjunan, Michael O. Ngadi, Manjeet S. Chinnan
English | 2009-09-22 | 184 Pages | ISBN: 0849314615 | PDF | 3.2 MB

Comprehensive Coverage of an Ever-Growing Industry
Despite the hype about healthy, low-carb/low-fat diets, the production of deep-fat fried foods continues to be a major processing operation around the world, generating billions of dollars each year. Due to their uniquely crispy exterior and juicy interior, breaded fried foods, in particular, are popular among consumers. Unlike many books that have focused solely on the process of deep-fat frying and fried foods in general, Breaded Fried Foods is one of the first references to provide a coherent and concise overview of issues that are specific to breaded, or battered, fried foods.

Modern Extraction Techniques: Food and Agricultural Samples (Acs Symposium) By Charlotta Turner
English | 2006-02-09 | 210 Pages | ISBN: 0841239401 | PDF | 19 MB

During the last ten years, several new extraction techniques have been developed that are faster, more automated and use less organic solvents compared to classical solvent extraction techniques. Furthermore, there is a clear trend going towards the use of (and research on) environmentally sustainable methods, which is encouraging for the future. Supercritical fluid extraction (SFE) and pressurized liquid extraction (PLE) are two of the most useful techniques for extraction of non-polar and medium polar solutes from solid and semi-solid samples.

The Public Health Effects of Food Deserts: Workshop Summary By National Research Council
English | 2009-06-02 | 114 Pages | ISBN: 0309137284 | PDF | 1 MB

In the United States, people living in low-income neighborhoods frequently do not have access to affordable healthy food venues, such as supermarkets. Instead, those living in "food deserts" must rely on convenience stores and small neighborhood stores that offer few, if any, healthy food choices, such as fruits and vegetables. The Institute of Medicine (IOM) and National Research Council (NRC) convened a two-day workshop on January 26-27, 2009, to provide input into a Congressionally-mandated food deserts study by the U.S. Department of Agriculture's Economic Research Service. The workshop, summarized in this volume, provided a forum in which to discuss the public health effects of food deserts.
